Recipe: Smokey Joe's Kosher Bacon Fried Rice

My family loves this recipe as a savory side dish to go along with just about anything or even as as main dish unto itself, with maybe a salad or a bowl of chicken soup to accompany it. Make sure all of the ingredients are cooked or chopped in advance and this dish will come together very quickly for you.

Ingredients (makes 8 side portions)

2 cups cooked rice - white or brown

3/4 cup onion, diced

3/4 cup celery, diced

1/2 cup edamame, shelled soy beans (cooked and thawed)

1 package Smokey Joe’s Kosher Beef Bacon, diced

1/3 cup carrots, diced

2 eggs whipped with a dash of water

2 scallions, chopped

1 tsp. ginger, grated

1 tsp. minced garlic

3 Tbsp. tamari soy sauce

1/4 cup oil for stir frying


In a large wok saute the diced bacon very quickly until browned but still soft. Remove the bacon  from the pan and set aside but keep the oil in the pan. Add the oil for frying and cook the onions, celery, and carrots together, stir-frying for about 5 minutes. Add the edamame, ginger, and garlic and stir fry for 2 more minutes. Now add the cooked beef bacon, rice, and scallions into the wok and stir. Toss in the egg and stir for another two minutes. Finish with the soy sauce. You may add white pepper if you enjoy it (I do!) and even a little sea salt to round out all the flavors and bring out a little more depth.
