Recipe: Spinach Salad with Smokey Joe's Kosher Beef Bacon

This is a recipe from my mother, from whom I learned to cook. Everything she touches is simply delicious, mostly because she makes everything with a full heart. She loves entertaining, and cooking for her family. This recipe is perfect as a first course, a side dish or a light meal paired with our GazpaJoe. 

Ingredients:

1 bag spinach

2 hard-boiled eggs

1 small onion

8 slices Smokey Joe's Kosher Beef Bacon

2 tomatoes

Pro tip: Candied or toasted walnuts 

Pro tip: 1 avocado, sliced

Dressing:

1 cup salad oil

1/2 cup red wine vinegar

1/2 cup sugar

1/3 cup ketchup

Dash of salt

Directions:

Cook bacon according to package directions, frying 3 minutes on each side. Blot dry with paper towels. Cut up tomatoes, onion and hard-boiled eggs and mix with spinach greens. Cut or crumble bacon and add to salad. Add walnuts and avocado if desired. Blend dressing ingredients and pour over salad or serve on the side.
